Mix graham cracker crumbs with melted butter and press into the bottom of a springform pan.
- Melt white chocolate and set aside to cool.
- Blend cream cheese and sugar until smooth. Add eggs one at a time, then vanilla extract and sour cream.
- Stir in melted white chocolate.
- Pour over the crust and bake in a preheated oven at 325°F (163°C) for 1 hour.
- Chill in the refrigerator overnight.
- Top with raspberry coulis before serving.
